Gojis and Seeds Snack Balls


1/4 cup goji berries (soaked and drained)
1/4 almonds
1/4 chia seeds
1/4 hemp seeds
3 dates (pitted, soaked, and drained)
pinch sea salt
1/2 tsp of cinnamon
1 tsp coconut oil
drizzle of honey or stevia to taste

roll into cookie balls and freeze or roll out on teflex and slightly dehydrate

Filling:
cashews
dates
young coconut meat
young coconut water
vanilla
lemon juice and zest
coconut oil 
cacao butter
raspberries

Crust:
almonds
sea salt
cinnamon
dates

Process filling in the vitamix, crust in the food processor. Smash into cupcake tins or whatever you have hanging around.

Blue Green Protein Smoothie

2 scoops Sunwarrior Vanilla Protein Powder
1 tbs Vitamineral Green
1 tbs maca
12 oz hemp milk (water, or almond milk)
1/4 cup blueberries
handful of ice cubes

Blend and enjoy! 

Sunwarrior is my favorite vegan protein powder that I have tried so far.  It blows hemp protein away.  I also love Vitamineral Green for  an overall nutritional addition.

Gazpacho

Gazpacho

1/2 cups of coarsely chopped tomatoes (I used 2 yellow, 1 red tomato)
1 medium/large cucumber
1 clove garlic
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp celtic sea salt
1 jalapeno pepper
black pepper to taste

Blend the above ingredients well, reserving half of the cucumber for garnish.  I also topped the cold soup with avocado.

Chia Seed Red Sauce

Oil-free, nut-free, raw marinara.



1/4 cup chia seeds
1.5 cups of water
8 pieces of sun dried tomatoes
2 cloves of garlic
1 red bell or italian sweet pepper
1/2 tsp thyme
1/2 tsp rosemary
1/2 tsp basil
1/2 tsp oregano
a teeny pinch of stevia
black and/or cayenne pepper
soak chia seeds and sundried tomatoes in water for 30 minutes stirring every few minutes. Blend with remaining ingredients and serve over your favorite pasta, kelp noodles, or zucchini noodles.

black sesame seeds
tossed with an asian dressing:
2 tbs agave
2 tbs rice wine vinegar
1 tsp tamari, soy sauce or braggs liquid aminos
pinch of cayenne pepper
1 tsp sesame or olive oil
black pepper

Lemon Gynostemma Eucommia Elixir





12 oz gynostemma tea 
1 tbs eucommia bark powder available at hyperion herbs
juice from 1/2 lemon
ginger to taste

stevia to taste

Don't brew the gynostemma tea too long, or it will get super bitter.  Blend the above in your vitamix and enjoy warm.  Honey or gojis could be added for a sweeter drink.

Gynostemma is an adaptogenic leaf usually brewed for tea.  I like to mix it with holy basil or goji berries.    Its anti-inflammatory, and high in antioxidants.  It is known as the immortality herb, as drinkers of gynostemma tea live long lives.  

Eucommia bark is famous in Chinese herbalism for nourishing the kidneys and liver, aiding in joint paint specifically in the lower back, knees, and legs, and strengthening the bones.  It also supports the endocrine system and is great for pregnancy.  Eucommia pairs well with reishi or ginseng.

Sun Chips


Kale on the steps of my back deck.  It's 95+ here lately, so I figured why not maximize the sun's energy?

Destem your kale and massage with extra virgin olive oil and sea salt.  Let the sun have fun and enjoy after 4ish hours or until crispy.  If you like your oven instead of the sun you can let your kale marinade at about 350 for 10-15 minutes.

Honey Vanilla Lavender Ice Cream











handful of fresh lavender
2 cups of raw cashews soaked 6+ hours with half of the lavender
only the "meat" from 1 thai coconut
1/4-1/2 cup of local, raw honey to taste
pinch of sea salt
pinch of cinnamon
2 tbs of vanilla extract

soak cashews all day with the lavender.  make a tea with the remaining lavender and cool the water.  steep at least 8oz and combined with soaked and drained cashews (without the lavender unless you're feeling crazy) and the other ingredients in your blender, blend and add to your ice cream maker.  My three favorite smells right now are honey, vanilla, and lavender- inspiration for this creamy treat.  :)

Cantaloupe Blackberry Ginger




8oz of young thai coconut water
1/2 cup cantaloupe
1/4 cup blackberries
thumb sized knob of ginger

blend.
so refreshing on a summer day :)
